Kitchen management: building a line that runs without you

A well-run line looks calm. That calm is not talent — it is a set of decisions made long before service.
Write the station. Every position should have a printed prep list, a mise-en-place map, and a clear handover standard. New cooks should be productive on day two, not week six.
Standardise the recipes, photograph the plates, and keep both where the team works. Consistency is a documentation problem before it is a skill problem.
Then step back deliberately. Run a service where you only observe. Whatever breaks while you are silent is the part of the system that was still living in your head.
