How to open a restaurant without burning your first year of cash

Most first-year failures are not caused by bad food. They are caused by the wrong order of decisions: a lease signed before the concept is defined, a kitchen built before the menu exists, a team hired before the systems that would let them succeed.

Start with the guest and the number. Who is coming, how often, and what will they comfortably spend? Everything downstream — square metres, equipment, staffing, hours — is arithmetic once those two answers are honest.

Then build the menu before the kitchen. The menu decides your equipment list, your prep flow, your storage, your labour cost and your supplier map. Designing a kitchen first almost always means paying twice.

Finally, protect a reserve. A restaurant that opens with zero cushion has to be profitable in month one, and almost nothing is. Three to six months of operating cost is not pessimism; it is the price of being allowed to learn.
